Nicoletta's Greek Stuffed Peppers Nicole Deery February 24, 2019 Stuffed peppers take on a Mediterranean flare when you incorporate our Nicoletta’s multipurpose red sauce. What to get: 2-24 ounce jar of Nicoletta’s Greek Spaghetti Sauce1/2 pound ground beefWhite or brown rice, cooked according to package for 4 servings.4 sweet peppers, the color of your choice.Dried oregano.Crumbled Feta cheese.Kalamata olives. (Optional) What to do: Preheat oven to 350.Wash the peppers, then cut off and discard the tops. Scoop out the seeds and membranes and discard as well. Place them in a baking dish, hallowed side up. When choosing peppers, look for those that are uniform in size and more square so they stand upright. Next Cook the rice according to the package. You should have enough for 4 servings. Set aside.Brown the ground beef.Combine the cooked rice, beef and 1 jar of Nicoletta’s Greek Spaghetti Sauce. Stuff the mixture evenly into the peppers. Almost there.. Place in oven and bake for 60 minutes, basting every 15 minutes with 1/2 of the second jar of sauce until peppers are tender. Done! Remove from oven. Sprinkle with crumbled feta and chopped olives as desired. Add a few shakes of dried oregano.Enjoy!Makes 4 servings.
